Cinnamon Tahini Pancakes with Maple Tahini Syrup

Ingredients

Pancakes

  • 2 eggs

  • 2 tbsp Greek yogurt

  • 2 tbsp tahini

  • 1/4 cup almond milk (or milk of your choice)

  • 1/2 cup flour

  • 1 tsp baking powder

  • 1/4 tsp cinnamon

  • 1/2 tbsp oil

Syrup

  • 1/4 cup maple syrup

  • 2 tbsp tahini

  • 1/4 tsp cinnamon

Makes about 8 large pancakes

Directions

  1. In a large bowl, mix first 4 ingredients.

  2. Add next 3 ingredients to the bowl.

  3. Heat a nonstick pan with 1/2 tbsp oil. When hot, add 1/4-1/3 cup batter, cooking until bubbles form and begin to burst, then flip and cook 1 more minute. Add more oil as needed.

For the syrup:

  1. Mix all ingredients and drizzle onto pancakes.
