Zoodles Bolognese


  • 8 oz can crushed tomatoes

  • 1/2 avocado

  • 2 garlic cloves, divided

  • 1 tbsp nutritional yeast

  • 1 lb ground turkey

  • 1 tsp oregano

  • 1 cup sliced mushrooms

  • Salt and pepper, to taste

  • 3-4 medium zucchinis

  • 2 tsp olive oil

  • 1/4 cup Parmesan cheese

Makes 4 servings


  1. In a blender or food processor, combine first 4 ingredients, using only 1 garlic clove. Blend until smooth and set aside.

  2. Heat a large pan over medium-high heat. Once hot, brown ground turkey.

  3. Add oregano, mushrooms and remaining garlic clove, minced. Stir often until mushrooms are soft. Mix in sauce, adding salt and pepper to taste. Turn heat down, simmer for 3 minutes.

  4. Wash zucchinis, peel and remove ends. Use a spiralizer or vegetable peeler to make zoodles.

  5. Heat olive oil over medium heat. Add zoodles, tossing lightly and cooking for only ~2 minutes.

  6. Top zoodles with 1/2 cup bolognese sauce and 1 tbsp Parmesan.
