Roasted Pear and Chai Spiced Oatmeal
1 tbsp apple cider vinegar
1 tbsp maple syrup
1/4 tsp cinnamon
Dash of salt
1/2 cup unsweetened vanilla almond milk
1/2 cup water
1 Chai spiced tea bag
1/2 cup rolled oats
1 tbsp chopped walnuts
Makes 1 serving
Preheat oven to 375. While oven heats, slice pear lengthwise and use a small spoon to scoop out seeds and core. Place pears cut side up on a baking sheet lined with parchment paper.
In a small bowl, mix together apple cider vinegar, maple syrup, cinnamon and salt.
Pour mixture over pear and bake for 30 minutes.
While pear cooks, mix almond milk with water and heat in microwave until boiling. Steep chai tea bag for 3-5 minutes. Discard tea bag.
In a bowl, mix tea with rolled oats. Heat in microwave for 90 seconds, stir, heat another 30 seconds. Let stand 5 minutes to allow remaining liquid to absorb.
Top oatmeal with half a baked pear and chopped walnuts. Drizzle with maple syrup and a shake of cinnamon.
Tip: I prepared several pears at once the night before and also brewed the tea the night before - only had to do steps 5 & 6 in the morning.
