Honey Lime Chicken


Honey Lime Glaze

  • Juice and zest from 1 lime

  • 3 tbsp honey

  • 2 tbsp olive oil, divided

  • 1 tbsp low sodium soy sauce

  • 2 garlic cloves, minced

Chili-Rubbed Chicken

  • 1 tsp cumin

  • 1 tsp chili powder

  • 1/2 tsp paprika

  • salt and pepper, to taste

  • 1 lb boneless, skinless chicken tenders

Makes 4 servings (~3 oz cooked)


  1. In a bowl, combine lime juice and zest, honey, 1 tbsp olive oil, soy sauce and garlic. Mix well, then set glaze aside.

  2. In another small bowl, create a dry rub by combining cumin, chili powder, paprika and salt and pepper.

  3. Heat remaining tbsp olive oil in large pan over medium-high heat.

  4. Pat chicken dry and spread rub evenly on both sides before adding to tenders to the pan. Cook 4 minutes.

  5. Flip chicken, and pour glaze into pan. Cook for an additional 4-5 minutes or until chicken is cooked thoroughly. Glaze with thicken with heat and can be served with the chicken.

Tip: I tend to use chicken tenders instead of chicken breasts, because they cook more quickly.
