Honey Lime Chicken
Honey Lime Glaze
Juice and zest from 1 lime
3 tbsp honey
2 tbsp olive oil, divided
1 tbsp low sodium soy sauce
2 garlic cloves, minced
1 tsp cumin
1 tsp chili powder
1/2 tsp paprika
salt and pepper, to taste
1 lb boneless, skinless chicken tenders
Makes 4 servings (~3 oz cooked)
In a bowl, combine lime juice and zest, honey, 1 tbsp olive oil, soy sauce and garlic. Mix well, then set glaze aside.
In another small bowl, create a dry rub by combining cumin, chili powder, paprika and salt and pepper.
Heat remaining tbsp olive oil in large pan over medium-high heat.
Pat chicken dry and spread rub evenly on both sides before adding to tenders to the pan. Cook 4 minutes.
Flip chicken, and pour glaze into pan. Cook for an additional 4-5 minutes or until chicken is cooked thoroughly. Glaze with thicken with heat and can be served with the chicken.
Tip: I tend to use chicken tenders instead of chicken breasts, because they cook more quickly.
