Banana Chocolate Chip Muffins

Ingredients

  • 3 ripe bananas

  • 1/4 cup butter, melted

  • 1 egg

  • 1/2 cup sugar

  • 1 tsp vanilla

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 1/2 cups flour

  • 1/2 semi-sweet chocolate chips

Makes 12 muffins

Directions

  1. Preheat oven to 350 and oil muffin tin with vegetable oil.

  2. In a large bowl mash bananas, then stir in next 6 ingredients (through salt).

  3. Add flour 1/2 cup at a time, mixing well, until dough is uniform.

  4. Gently fold in 1/3 cup chocolate chips.

  5. Spoon batter into muffin tins, filling 1/2-3/4 of the way full. Then sprinkle remaining chocolate chips on each muffin.

  6. Bake for 25 minutes or until a toothpick comes out clean.

Tip: I didn't have regular sugar on hand, so instead I used packets of Splenda - 13 packets is the equivalent of 1/2 cup.
