Wheat Berries with Apple, Almond Butter and Goat Cheese
1 1/2 cups wheat berries
2 tbsp creamy almond butter
1/2 tsp ground cinnamon
1 medium apple, chopped
1/4 cup Greek yogurt
2 oz goat cheese
1/4 walnuts (or nuts of your choice)
2 tsp honey
Makes 4-6 servings
Cook wheat berries according to directions on package.
Allow wheat berries to cool, then combine with almond butter, cinnamon and apple.
In a small bowl, mix Greek yogurt and goat cheese.
To serve: 1/2-2/3 cup wheat berry mixture, topped with 1-2 tbsp yogurt mixture, sprinkle nuts and drizzle with honey.
