Wheat Berries with Apple, Almond Butter and Goat Cheese

Ingredients

  • 1 1/2 cups wheat berries

  • 2 tbsp creamy almond butter

  • 1/2 tsp ground cinnamon

  • 1 medium apple, chopped

  • 1/4 cup Greek yogurt

  • 2 oz goat cheese

  • 1/4 walnuts (or nuts of your choice)

  • 2 tsp honey

Makes 4-6 servings

Directions

  1. Cook wheat berries according to directions on package.

  2. Allow wheat berries to cool, then combine with almond butter, cinnamon and apple.

  3. In a small bowl, mix Greek yogurt and goat cheese.

  4. To serve: 1/2-2/3 cup wheat berry mixture, topped with 1-2 tbsp yogurt mixture, sprinkle nuts and drizzle with honey.
