Broccoli Pesto Pasta


  • 8-oz pasta of choice

  • 1 cup broccoli, steamed

  • 1 cup spinach

  • 1/2 cup chopped walnuts

  • 2 garlic cloves

  • 3 tbsp nutritional yeast

  • 4 tbsp olive oil

  • salt & pepper, to taste

  • 1/2 cup reserved pasta water

Yields 4 2-oz servings (1 cup cooked)


  1. Cook pasta according to directions. When draining, save 1/2 cup pasta water and set aside.

  2. While pasta cooks, add next 7 ingredients (through salt & pepper) to a food processor. Pulse well; pesto will be thick.

  3. In a large bowl, combine pasta and pesto. Slowly add 1/4 cup reserved pasta water to thin out the pesto. Mix well. Add more water as needed.
