Sweet Potato Fries with Roasted Garlic & Rosemary Yogurt Dip
3 medium sweet potatoes
3 Tbsp olive oil, divided
Salt and pepper, to taste
1 head of garlic
1 cup plain Greek yogurt
2 Tbsp rosemary
Preheat oven to 425.
While oven preheats, wash and slice sweet potatoes into 1/4" fries. Toss with 2 Tbsp olive oil, salt and pepper.
Trim just the head of garlic, so that the cloves are exposed. Remove any loose papery pieces and pour remaining tablespoon olive oil over the garlic, so it sinks into the cloves. Wrap completely in foil.
Spread sweet potatoes in one layer on a baking sheet and place wrapped garlic foil on another baking sheet.
Roast sweet potatoes and garlic for 40 minutes, until potatoes start to brown, flipping potatoes once.
While potatoes and garlic roast, combine Greek yogurt and rosemary in a bowl.
Remove sweet potatoes and garlic from oven and open foil to allow garlic to cool for 10 minutes. Then, mash 5 garlic cloves into yogurt mixture.
Enjoy the fries with the homemade dipping sauce.
