1 Tbsp olive oil
1 cup marinara sauce
1/2 onion, chopped
1/2 bell pepper, chopped
1 garlic clove, minced
Handful of spinach
Optional toppings: 2 Tbsp feta (or any cheese), 1 Tbsp fresh basil, salt
Preheat oven to broil. Meanwhile, heat olive oil in cast iron skillet over medium-high heat.
Add onion and bell pepper, cook until onions are translucent (~4 minutes).
Add garlic and cook fo4 30 seconds, stirring frequently to avoid burning.
Add marinara sauce and spinach. Mix well and let simmer for 2 minutes.
Make wells for eggs and crack into skillet. Cook eggs for 5 minutes, undisturbed.
Move skillet into oven and broil for 1 minute.
Remove from oven and top with cheese, herbs and salt.
Tip: Serve with a crusty bread to soak up the sauce.
