20-Minute Shakshuka


  • 1 Tbsp olive oil

  • 3-4 eggs

  • 1 cup marinara sauce

  • 1/2 onion, chopped

  • 1/2 bell pepper, chopped

  • 1 garlic clove, minced

  • Handful of spinach

  • Optional toppings: 2 Tbsp feta (or any cheese), 1 Tbsp fresh basil, salt


  1. Preheat oven to broil. Meanwhile, heat olive oil in cast iron skillet over medium-high heat.

  2. Add onion and bell pepper, cook until onions are translucent (~4 minutes).

  3. Add garlic and cook fo4 30 seconds, stirring frequently to avoid burning.

  4. Add marinara sauce and spinach. Mix well and let simmer for 2 minutes.

  5. Make wells for eggs and crack into skillet. Cook eggs for 5 minutes, undisturbed.

  6. Move skillet into oven and broil for 1 minute.

  7. Remove from oven and top with cheese, herbs and salt.

Tip: Serve with a crusty bread to soak up the sauce.
