1 lb ground turkey
1 bag of frozen cauliflower gnocchi
2 handfuls spinach (about 1 cup)
2 garlic cloves, minced
1/4 onion, diced (about 1/4 cup)
1/4 cup pesto
1 tbsp olive oil
1/4 tsp garlic powder
black pepper, to taste
In a cast iron skillet, brown turkey until there is no pink color, about 8-10 minutes. In the last minute, add the spinach, garlic, onion and pesto. Mix well. Season with garlic powder and black pepper.
While meat browns, in a separate skillet, heat olive oil over medium-high heat. Add frozen cauliflower gnocchi. Stir frequently, breaking up any pieces frozen together, until gnocchi is soft and translucent.
Add gnocchi to cast iron skillet and mix thoroughly.
Service with a dash of red pepper flakes, if desired.
